How to cook it

  1. Soak the cashews in hot water for 10 minutes, then blend them smooth with a splash of the water.

  2. Heat the oil in a pan and cook the onions, garlic, ginger, and cardamom until soft and pale golden, about 8 minutes.

  3. Add the coriander, chili powder, and chopped tomatoes and cook until soft, about 6 minutes, then blend the mixture into a smooth gravy.

  4. Return the gravy to the pan, stir in the cashew paste and a cup of water, and simmer gently for 6 minutes.

  5. Fold in the cubed paneer, cream, and salt and warm through for 5 minutes without boiling hard.

  6. Sprinkle with garam masala and serve hot with roti or rice.
