Put the beef, rinsed chana dal, quartered onion, ginger garlic paste, dried red chilies, peppercorns, cardamom, cloves, cinnamon, cumin, salt and water in a pot.

Cook covered 45 minutes, or 20 minutes under pressure, until the meat is falling apart and the dal is soft. Then take the lid off and boil hard until every drop of water has gone. A wet mixture will not hold.

Cool the mixture completely, pick out the cinnamon stick, and grind it to a smooth paste in a food processor.

Knead in the chopped green chilies, coriander leaves, mint and lemon juice, then shape the mixture into flat discs about the width of your palm.

Beat the eggs in a shallow bowl. Heat the oil in a frying pan, dip each kebab in the egg and shallow fry 2 minutes a side until deep brown and crisp.

Make a double batch and freeze the shaped uncooked kebabs between sheets of paper: they fry from frozen and turn a bad evening into dinner. Serve with roti and raita.
