How to cook it

  1. Rinse the rice until the water runs clear and soak it 20 minutes. Rinse the lentils separately.

  2. Simmer the lentils in 3 cups of the water with the turmeric and salt for 18 minutes, then whisk them into a loose puree and hold them on low heat.

  3. Boil the drained rice in plenty of salted water for 8 minutes until the grains are just done, drain, and leave covered off the heat to steam.

  4. Heat the oil in a small pan, pop the cumin seeds, then fry the sliced onion and sliced garlic until deep golden, about 6 minutes.

  5. Add the chopped tomato and red chili powder and cook 3 minutes until the oil separates, then pour the tarka over the daal.

  6. Spoon the rice into bowls, ladle the daal over the top, and finish each bowl with coriander leaves, a slit green chili and a squeeze of lemon.
