How to cook it

  1. Rinse the rice and moong dal together until the water runs clear.

  2. Put them in a pot with the water, turmeric, salt and black pepper and bring to a boil.

  3. Lower the heat and simmer 22 minutes, stirring now and then, until the grains have gone soft and the whole thing is thick and porridge-like. Add hot water if it tightens too far.

  4. Heat the ghee in a small pan, sizzle the cumin seeds, then fry the sliced garlic and onion until pale gold, about 4 minutes.

  5. Pour the tarka over the khichri and stir it through.

  6. This is what a Pakistani household cooks when somebody is unwell or a small child will not eat anything else, so keep it soft and gentle rather than spiced.
