How to cook it

  1. Rinse the rice in several changes of water until the water runs clear, which takes four or five rinses.

  2. Soak it 20 minutes and drain. Soaked basmati cooks longer in the grain and stays separate.

  3. Bring the water to a rolling boil with the salt and the teaspoon of oil.

  4. Tip the drained rice in and boil uncovered 7 minutes, testing a grain: it should be cooked through with the faintest firmness left.

  5. Drain immediately in a colander and shake off the water.

  6. Return the rice to the warm dry pot, cover, and let it steam off the heat for 10 minutes before forking the grains apart.
