How to cook it

  1. Mix the atta with the salt, then add the water a little at a time, working it into a soft dough that just clears the bowl.

  2. Knead 8 minutes until it is smooth and springs back when pressed, then cover it and rest it 20 minutes.

  3. Divide into balls the size of a lime and roll each one out into a thin round, dusting with dry atta as you go.

  4. Heat a tawa or heavy pan until a drop of water skitters across it. Lay a roti on and cook 30 seconds until small bubbles rise.

  5. Turn it, cook 30 seconds more, then turn again and press the edges gently with a cloth so it puffs into a ball.

  6. Brush with a little ghee and stack the rotis in a covered cloth so they stay soft. Make them fresh at the meal, never in advance.
