How to cook it

  1. Make a soft dough with the atta, salt and water, knead it 8 minutes until smooth, and rest it 20 minutes under a cloth.

  2. Roll a ball out into a thin round, brush it all over with ghee, and dust it lightly with dry atta.

  3. Fold the round into a fan of narrow pleats like a paper concertina, then coil the strip into a spiral and press it flat.

  4. Rest the coil 5 minutes, then roll it out again gently into a round about the thickness of a coin. The layers inside are what make it flaky.

  5. Cook on a hot tawa for 1 minute, turn, brush the top with ghee, and turn again, pressing the edges with a cloth until both sides are golden and blistered.

  6. Serve hot with anda, achar or plain yogurt, and a cup of chai.
