Warm the milk to blood heat, stir in the sugar and yeast, and leave 10 minutes until it froths.

Mix the flour, salt and baking powder, then work in the yogurt and the yeast milk to make a soft, slightly sticky dough.

Knead 8 minutes, cover, and leave in a warm place for 1 hour until doubled.

Divide into six pieces, roll each into a teardrop, and press nigella seeds into the surface.

Heat a heavy pan or a cast iron griddle until it is smoking. Wet one side of the naan lightly with water and slap the wet side down so it sticks.

Cook 1 minute until bubbles form, then invert the pan over a flame or slide the naan under a hot grill for 30 seconds until it blisters. Brush with ghee and serve at once.
